Wow, it's the end of January and we open in less than 3 months. So much has to be done still, but we are on track to a very successful season. This past month we have tightened up our department policies on safety and training. We have expanded the menu in Back Lot, Risto, Cornerstones (our staff restaurant), You Go Grill and a new Cup Cake location (to be announced). We have a new full time employee working in our department, Kevin Booth has joined us as Food and Beverage manager to help Khoa with all the work in the park. He looks like a great addition with experience in high volume catering, experience with the restaurants, bars and seems like a nice guy. Some of our returning managers from last year started recruiting new employees already (we have a job fair starting today and running all weekend) Looks like we have a lot of great returning staff which will make the year even better.
Now looking forward to the next couple of months we have a lot of work still ahead of us. I am looking forward to building the new recipes and sharing the experience with some of the other park employees. I know they all want to be involved in this process, but that is hard to do. I am continuing work on our HACCP Program to ensure safe food is always served in the park, this involves new policies and procedures related to the handling of food from the time we order it to the time you consume it. Each of our recipes have been updated and this month I will be testing out the recipes and taking new photos to ensure every time you order something it will always be the same. We are still working with our suppliers to purchase better products and looking for the perfect patty that will make the Behemoth Burger. I will keep you posted on the changes we make and how this improves what we have at the park.
I just want to pass on to you a great restaurant I went to last night. I met my Cousins for dinner at Scaramouch, an amazing restaurant in Toronto that has been there for 25 years. My Cousins have been going there since it opened. The food was amazing and the wine we tried was unbelievable.
